Caught on video

An ABC affiliate in Topeka caught live video of a tornado as it wound its way through Manhattan, Kansas, and onto the Kansas State University campus. It’s dark footage, but the large tornado is visible during many lightening strikes. The video, which captures the on-air meteorologists in complete disbelief, ends when debris from the tornado destroys the station’s skycam.

It’s a beautiful evening, and not just because both girls were asleep by 8:30.

No cracks!

A few weeks ago, I posted about how difficult it is (for me, anyway) to bake a cheesecake without the top cracking. Well, finally, I had some success.

I made an cookies and cream cheesecake for Bryan’s birthday. I used a slightly different recipe: In addition to cream cheese, eggs, sugar and vanilla, this one called for a quarter cup of sour cream and heavy cream. And peanut butter Oreos, which I did not need to know existed.

I think the real trick, though, was shutting off the oven after 40 minutes. Instead of taking the cheesecake out at that point, the recipe suggested leaving it inside (in the water bath) with the oven door ajar for another 30 minutes. Perfect!

Sneak attack

Despite dinner outside just an hour ago, we didn’t see this one coming!

This storm brought 60 mph winds and pea-sized hail.

Surprise!

Three of Bryan’s best friends flew in from various parts of the U.S. to surprise him for his 30th birthday. I think it’s safe to say that he was totally shocked.

Thanks to Bry’s wonderful friends, who when I called and suggested this six months ago, didn’t hesitate. Instead, they said, “When should we be there?”

He’s a pretty lucky–albeit old–guy.
